Salsa is one of my all-time favorite things to eat. Especially in the summer when a nice, cool snack always sounds refreshing. Unfortunately, the unrelenting heat has turned my plants into something like this.
Needless to say, I have zero tomato plants. In all honesty, I have zero plants. I left for one weekend and they all dried out. You could probably say I’m a plant serial killer. I’m okay though, because I came across this peach salsa recipe that I love. I thought you might too!
- 1 cup sliced canned peaches, drained and chopped
- 1/3 cup chopped red onion
- 2 cloves garlic, minced
- 1 1/2 teaspoons minced fresh ginger root
- 2 teaspoons minced chipotle peppers in adobo sauce
- 1/3 cup chopped fresh cilantro
- 1/2 lime, juiced
- salt and pepper to taste
If you make this in a food processor, it will make your life 10 times easier. If not, the results are still delicious, you just have a little more work to do.
First, add your peaches & minced ginger to your food processor and pulse until the peaches are in small chunks.
Transfer to a medium mixing bowl. Then add your remaining ingredients and pulse until everything is in tiny pieces.
Now add that to your bowl of peaches.
Stir to combine.
Chill until serving time; serve with tortilla chips.
